workings of the Goldmoney CC

Is my understanding correct that the money stored on the credit card is in dollars and not grams of gold? And if so, that means every time you need to put more value on it you must buy more grams of gold at a 1% charge? and that there is a charge when you use it as well?

The balance on your card will be in dollars, that is correct. You dont necessarily have to buy new grams just to load your card. Say for example, you had a gold balance in your regular account, then gold appreciated 5%. You could transfer all the appreciation to your card and use that to purchase something.
